Caprese Bruschetta

So let's be honest here. What is there not to love about caprese? It's healthy, delicious, and simple! When I don't know what to have for dinner? Caprese for one please! Pair it with a glass of sauvignon blanc. Perfection.

Ingredients:
1 ripe tomatoes, sliced
1 cup of fresh basil leaves, washed and spun dry
Garlic olive oil (for drizzle)
Kosher salt and fresh ground black pepper
Sourdough baguette, toasted and sliced 1-inch thick

Directions:
Place the tomatoes and mozzarella on the toasted sourdough baguette. Top with fresh chopped basil then drizzle with garlic olive oil. Sprinkle salt & pepper. To add a little kick, add chilli flakes.

Roast Chicken Lettuce Wraps


I love anything wrapped in anything…especially tacos! Unfortunately, we all know that tortillas are loaded with carbs so I substituted tortillas with butter lettuce instead. Don’t get me wrong. I love carbs. Pastas, rice, tortillas, you name it. I’ve set a goal this year: Eat healthy during the weekdays, and splurge on the weekends. Ya gotta find that perfect balance! This recipe is so simple, healthy, and delicious. Trust me, read the directions below.

Ingredients:
Butter lettuce (or regular lettuce. Whatever you prefer)
Tomatoes (diced)
Cilantro
Lime
Roast chicken
Chili flakes

Directions:
Chop the lettuce. Dice the tomatoes. Finely chop the cilantro. Chop the roast chicken in nice bit pieces. Place the chicken, tomatoes, and cilantro in the lettuce cup. Squirt some lime juice. Add some chili flakes (if you like your food spicy like me). Oh, and don’t forget the sriracha. It’s that simple!
